What You Get:
To give you an idea of what cuts you get out of a half or whole hog, these are the selections you have out of each primal cut of a hog.
LOIN - Tenderloin, Loin Roasts OR Pork chops (bone-in or boneless)
SIDE - Fresh Pork Belly, Spare Ribs, Baby Back Ribs
- Uncured Roasts/Steaks
, SHOULDER - Boston Butt Roast and Picnic Roast
Any part can be put into sausage if you tend to go through more sausage than roasts. For instance, we love sausage so with a whole hog we usually get one shoulder cut into a couple roasts and the other shoulder put into sausage. If you want all the roasts, ribs, and belly then expect only about 20# of sausage from the trimmings.
Bulk Pastured Pork Order Details:
They are sold by hanging weight ($6.00 /lb for half and $5.50 /lb for whole)
Processing fees are additional and can paid directly to the butcher or to us.
Processing fees include custom cutting and packaging following your specifications
USDA Processing available for an additional cost.
Hogs are processed at CutRight Outback in Vero Beach, FL.

Approximately 70-75 lbs of meat
**Can easily fit in a smaller size chest freezer
Approximate retail value of $650- 750 (Your approximate cost is $500-600)
The price includes us hauling the animal to the processor and educating you on the cut choices available
Once your order is ready you can pick it up at the butcher or at our ranch in Palm City.
Estimates are based on a 275lb animal, weights can differ which will change the estimates

Its important to note that each animal is different and will not yield exactly what's listed below, yet this can be used as a general guideline on what to expect for a whole hog.
12-15lbs of belly (used to make Bacon)
15-18lbs of Chops (Bone-in or Boneless chops)
15-20lbs of sausage (More if you grind hams, picnic roasts etc)
30-40lbs of hams (can be made into ham steaks, whole hams or ground for more sausage)
20-25lbs shoulder roast (Boston Butt, Picnic Roast)
3-5lbs spare ribs
4-5lbs ham hocks
3-5 lbs soup bones
*Lard available upon request
Refund Policy
All deposits are non-refundable. It’s important to understand that by reserving your share of our hogs your deposit is used to plan the buying, raising, and processing of your hog for you. We appreciate your understanding of this and advise that deposits can be transferred to another person if needed.
